Water clinging to salad leaves can dilute dressing and leave a puddle at the bottom of the bowl. Prepare the leaves so they are clean, well drained and dry enough for dressing to coat them. Begin by reading the package: leaves sold as prewashed or ready to eat may not need washing again.
Start with clean hands and equipment
Clean the sink area, bowl and any spinner before use. Keep leaves away from surfaces or utensils that handled raw meat. Remove leaves that are spoiled rather than hoping washing will restore them. Wash ordinary loose leaves under cool running water, gently separating folds where soil can hide. Do not use soap or detergent on produce.
Handle delicate leaves gently
Separate a head into manageable sections and rinse without crushing. If using a bowl to loosen visible soil, lift the leaves out rather than pouring dirty water back over them, then rinse under running water. Refresh dirty water instead of using the same cloudy bowl for multiple batches.
The WAFORA™ PrepMaster prep bowl is listed for vegetable washing and salad preparation. Follow its supplied instructions for the appropriate components; do not assume it has a powered or spinning function.
Remove water in stages
- Drain the leaves so the bulk of the water runs off.
- If using a salad spinner, work in batches that can move freely rather than compressing a full load.
- Spread leaves on a clean towel and gently blot remaining droplets when needed.
- Move them to a clean, dry mixing bowl before dressing.
Without a spinner, use towels and a little patience. Rough rubbing bruises tender leaves. Check the bowl itself: pouring dry leaves into a wet bowl recreates the problem.
Dress close to serving
Add a little dressing, toss and check coverage before adding more. Salt and acidic dressings can draw moisture from ingredients as they stand. Keep dressings separate when preparing ahead, and refrigerate washed perishable greens promptly according to label and food-safety guidance.
If storing washed leaves, use a clean suitable container and manage excess moisture with a clean absorbent liner. Replace a wet liner and check condition before use. This is not a method for extending a printed use-by date or rescuing spoiled greens.
